Ramen Noodles

Posted on 17 December 2012 by Cathy

Did you know you can make your own ramen? Ramen begins with Chinese style wheat noodles and stock or base. You can add chicken or pork, seaweed, green onions or corn.

Noodles 4 oz – 8 oz
Stock (Chicken, Beef or Pork) 2 cups – 4 cups
Base (Chicken, Beef or Pork)
1 tsp sesame oil
garlic powder
chili powder
Salt and Pepper to taste
Soy sauce for color and to taste

Optional Ingredients
*Chicken (cooked)
*Pork (cooked)
*Beef (cooked or raw)
*Boiled eggs
*Bean sprouts (raw)
*Green Onions (cooked or raw)
*Chili pepper
*Sesame seeds
*Minced or crushed garlic (cooked or raw)

You can find noodles in any asian store. There are many bands to choose from!

You want one serving (4 oz)

If you are hungry double the noodles (8 oz)

Cook the noodles in stock 3-4 minutes

Add seasonings, oil, soy sauce and base

I love to eat my noodles in a big white bowl

Some like to drain them instead of eating like a soup. You can also add meat and vegetables to make it more healthy or leave plain.

I like to eat mine as a soup.

Enjoy!

Bake or grill chicken until done. There is more depth of flavor if you marinate the chicken overnight

dsc_0098

Find a pot big enough to cook pasta in because it needs room to cook properly

dsc_0097

Boil the pasta in a large sauce pan until al dente, according to the package instructions. Drain and set aside

Next grab some corn tortillas

dsc_0081

Cut into strips

dsc_0082

Take the strips and fry them until crunchy set aside

dsc_0087

We are now going to make the garnish which is ….Picco de Gallo. … Chop the 6 tomatoes

dsc_0083

Chop the jalapeno

dsc_0088

Chop with or without the seeds

dsc_0089

This is where all the heat is along with the veins!

dsc_0086

Combine tomato, onion, jalapeno pepper and cilantro. Season with garlic powder, salt and pepper to taste. Set aside

dsc_0001

Have you ever had chipotles in adobo sauce?

dsc_0003

They are wonderful for their depth of flavor they add to your recipe! I suggest you puree them and put them in the freezer. You can take out just what you need at any time. This recipe requires 1 Tablespoon more or less to your taste

Now we are going to make the Chipote Cream Sauce. In a saucepan melt 2 tablespoons butter and add  1 small shallot toss, add chipotle puree, cream, spices and toss. Shred the chicken and toss in the sauce as well

Toss noodles with the sauce and cheese then plate. Garnish with the picco and tortilla strips…..yum!!!

I eat at this location about twice a month. There is always a line which moves really fast. The staff as this location have always been wonderful and the food also comes out really fast! Someone is helping by assigning a table if they are really that busy. The food is fresh with the vegan and spicy selections clearly marked. I happen to love the spicy food. In some cultures if your nose is not running it is an insult to the chef. Spicy will make your nose run and your taste buds tingle. You can opt to get lo mein noodles instead of rice with your meal. The sauce on the noodles is enough to flavor the noodles or rice.

I have not eaten everything on the menu yet because I really like what I usually order. I highly recommend the Caramel Chicken with it’s refreshing slaw of carrots, red onions, cucumber, and cilantro which is then tossed in a simple dressing made with rice wine vinegar. They have just brought it back out not long ago. This dish will be what I normally order until it is gone again. I had my Caramel Chicken with lo mein noodles instead of rice for a change of pace. All I can say is yummy!

My kids love to get the Honey Seared Chicken with lo mein noodles which also is good but does not have the layered flavors of the more complex dishes. I am hoping they bring back the Korean BBQ with chicken which was also very flavorful and spicy!

Black Walnut Cafe

Woodlands, Texas location

2520 Research Forest Dr
The Woodlands, TX 77381

This is one of the best places I have been to in the Houston metro area. Everything has tasted wonderful. So far I have tried and loved the fried ravioli, chipotle chicken pepper pasta, black walnut lemon chicken, lasagna and a burger. The tomato sauce is apparently from scratch and was incredible. The atmosphere is also nice. Upscale casual is what I would call this place. The focus is on fresh and unusual ingredients. I am looking forward to going back again and again!

When you enter there are menus waiting to be picked up. You can sit in the entrance to decide what you want or walk to the back where you place your order. There are usually dishes made up for you to see what they look like before you order. You seat yourself and get your own drinks. When your order is ready you go back to the back to pick it up. In the middle of the Black Walnut is the bar and dessert area. There is an assortment of pastries and gelato for you to pick from if you have any room after your meal.
