Chocolate Chip Cookies

Chocolate Chip Cookies

I love chocolate chip cookies! This recipe is easy to throw together and will bring big smiles

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup chopped walnuts

Preheat oven to 350 degrees F

 

In a mixing bowl add 1 cup white sugar

Add 1 cup packed brown sugar

 


Add 2 sticks softened butter (one cup) then cream together with a mixer until smooth

 


Beat in the eggs one at a time then stir in 2 teaspoons of vanilla

 


Add one teaspoon baking soda in hot water and dissolve

 


Add to baking soda mix to the batter along with a half teaspoon of salt

 


Stir in 3 cups of flour

 


Stir in 2 cups of chocolate chips and one cup of nuts

 


Drop by large spoonfuls onto ungreased pans or line with parchment

 


Space evenly about 2″ apart

 


Bake for about 10 minutes in the preheated oven or until edges are nicely browned

 


Allow to cool on a wire rack and enjoy!!

Shane Harris is asking for everyone’s help getting the word out about what happened to his wife Sara. I am trying to help him by posting his request to my blog. On the 25th of November Sara passed away from an unknown respiratory illness brought on by inhaling something from the environment during a paranormal investigation. You can read more about what happened to Sara on my previous blog post here. Shane is starting the Sara Harris Foundation. Shane says that he needs your help to spread the word about it.

“I have a paypal account set up for donations. I also have 3M on board to donate masks as soon as i get the tax id number. My paypal account is under saraharrisfoundation@yahoo.com”

He wants to know “Can you help our cause?”

Shane told me the purpose of The Sara Harris Foundation is to get the needed safety items like first aid kits, masks and other items out to paranormal teams who can’t afford them free of charge.

Shane says “Please help spread the word and anything collected will be going to a good cause. Lets be safe out there as i don’t want this to happen to you. I love you all for your support. Thank You!”

Please share what has happened with Sara and their family to all of your friends! They need to know the dangers of investigating. They also can help Shane by contributing to the foundation.

Recently I noticed a man named Shane Harris on facebook posting about the dangers of the paranormal. Specifically, he wanted to warn people that there are risks associated with inhaling things from the environment and becoming sick. This is his posting on facebook

WHY WE SHOULD WEAR A MASK WHEN INVESTIGATING

My wife Sara Harris is in UNC Chapel Hill Hospital…We are Paranormal Investigators and we need your prayers…She has been in the hospital for 24 days now…She now has been placed on an ECMO lung bypass machine because she has a infection from something she inhaled. We were doing an investigation at an house that had bats and rodent droppings…I believe that we stirred the air up and she inhaled something and infected her lungs to the point that she almost died…She now is on day 7 of the ECMO machine and has many many more days to go…She now has a 70% chance of living, but we won’t know until about day 10 . I am reaching out to the paranormal community for prayers and also so you can protect yourself against the things we can’t see that are living and breathing in the air. Please be careful, as i dont want this to happen to you…I update my face book page daily with her condition. I love my wife with all my heart… I was on Darkness Radio last night telling her story and want to know if you would be willing to tell her story also…You can contact me for more info.

When paranormal investigators go out we sometimes encounter mold, bacteria, viruses, wildlife, floors that are crumbling as well as other dangers. Sometimes it is best to wear a mask to protect your lungs. If you suspect any threat to your health you should be wearing a mask if you have to be on the property. His wife had become sick after an investigation were they were in a home that had bats and rodent droppings. This immediately gave me chills because it brought back memories of the hauntavirus.

In 1993 there was an outbreak of hantavirus in the Four Corners region of the southwestern United States. The host that carried that virus was found to be deer mice. It all began when a young and physically fit Navajo man began suffering from shortness of breath. He was rushed to a hospital in New Mexico and died very rapidly. When doctors began reviewing his case they found the man’s fiancée had died a few days before after showing the same symptoms. This finding launched a full investigation as to the cause by the New Mexico Office of Medical Investigations.

They went asking for similar cases and found 5 other young people had died with acute respiratory failure. The wheels started spinning faster now. Just think of movie Contagion or Virus. They all had acute respiratory symptoms similar to the flu which included throat irritation, coughing, sneezing, fever, chills, and muscle aches. They developed cough and severe symptoms of the disease about seven days after initial symptoms. Half of them had headaches, dizziness, chills, nausea, vomiting, diarrhea, and stomach pains. None of them knew they had a hauntavirus. Once the severe symptoms start with this disease it progresses rapidly with hospitalization and ventilation often required within 24 hours. When the outbreak in this case was over there were a total of thirteen people who died.

Hauntaviruses are the agents implicated in hemorrhagic fever with renal syndrome and hantavirus pulmonary syndrome. Hemorrhagic fever with renal syndrome is an acute febrile condition which was recognized after a 1951 outbreak among U.S. troops stationed in Korea. Outbreaks from hauntaviruses have occurred on and off throughout history. Those at risk from acquiring the virus are people who work, live and explore anywhere there are mouse droppings. Those who do urban exploration and paranormal investigators are also at a higher risk as well because they explore vacant buildings many of which contain droppings.

How a person becomes infected with the virus is by what we call inhalation of an aerosol. Rodents shed the virus in their urine, droppings, and saliva. When these droppings are stirred up by sweeping or moving things around, tiny droplets of the virus become airborne. The whole process is called aerosolization. People get the disease when they breathe air that has been contaminated by the virus. Other ways to be exposed are bites from a rodent or touching a surface that is contaminated with the virus and then touching your nose or mouth.

Since 1995 hantavirus pulmonary syndrome has been recognized 102 patients in 21 states of the U.S., 7 in Canada and 3 in Brazil with half of those people dying from the disease. There is no treatment or cure for this disease once it has been identified in a patient. The best hope anyone has is avoiding areas that could potentially have the virus.

If you happen to live in an infested area you want to sanitize your space. You need to get rid of the rodent infestation by trapping. When there is no evidence of infestation you must wait for about 5 days before beginning to clean these areas. The next step is to ventilate the space you are cleaning for at least 30 minutes to allow fresh air to enter by opening the doors and windows and leave the area while airing it out. When you begin to clean it is important that you do not stir up dust by using a vacuuming or sweeping the droppings or nest materials. You must wear rubber gloves and spray the urine and droppings with a disinfectant or a mixture of bleach and water and let soak 5 minutes before removing the urine or droppings with a paper towel. 1 part bleach to 10 parts water is the recommendation for the concentration of the bleach solution. Dispose of the waste in the garbage then disinfect anything that might have been contaminated. The next step is to thoroughly clean all the areas and everything within those areas.

Today I lost my wife and best friend…Things will not be same without her…I must now raise a daughter who misses her mommy…But i am happy that she is now with Jesus and i haft to change my lifestyle so i can be with her again…Sara baby I love you with all my heart and soul and you will always be my wife…nobody will ever get that chance…when we got married we both said “til death do we part” well baby i am not dead yet so you don’t need to worry…im a one women man and baby you are all i need and all i will ever have…I will see you again…I love you

There has been no confirmation anywhere yet on the virus or bacteria she was exposed to. I believe everyone who investigates needs to think before they go out. Is this worth your life? If you must go out you need to protect yourself from the environment. There are simple rules you should go by as an investigator. You should always go with another person in case you are injured. Always carry a flashlight and extra batteries with you to see where you are going. You need to pay attention to your environment so you do not get cut, punctured, bit, or fall breaking a bone. If you think there are in an area with rodent droppings wear a mask.

Pecan Pie

Pecan Pie

One of my favorite pies of all time!

3 eggs, beaten
3/4 cup light corn syrup
2 tablespoons dark corn syrup
1 cup sugar
3 tablespoons butter melted
1/4 cup Kaluah
1 pinch salt
1 Talespoon flour
1 cup pecans chopped
1 cup pecan halves


Get your pie crust ready


In a medium bowl, mix together eggs


Measure out light and dark corn syrups and add to the bowl


Add the sugar


Add melted butter


Add the Kaluah


Add flour, salt and chopped pecans then mix until blended. Add whole pecans and stir


Pour into pie shell


Bake in a preheated 350 degrees F (175 degrees C) oven for one hour or until firm; let cool for one hour before serving


Serve just like it is or a la mode

Roaster Oven

This year I was going to roast my turkey as I usually do. I made a trip to HEB central market for groceries for my thanksgiving dinner. If you have never been to central market it is quite an experience! Here is a link to check it out or yourself. I walked in and noticed they happened to have roaster ovens on sale. Believe me when I say I have everything in the kitchen I could possibly want or need and then some. This was something I did not need to add to my collection or was it? I was torn! I walked away from the display and thought I will get everything I need first and think about it. Perhaps I will forget about it or realise it is something I really don’t want.

So off I went into the store to grab what I needed from my list. As I was at the end of my trip and moving towards the registers when yet another display practically jumped out in front of me. This time instead of black roaster ovens stacked neatly they had red ones. They were screaming at me to get one. The store also had $10 off coupons taped to each box to further sweeten the deal. I was even more conflicted than before. I decided to throw caution to the wind and put one in my cart.

I started feeling guilty of yet another item coming into my already packed kitchen. I was hoping my husband wasn’t going to call me a hoarder which I most certainly am not. For those of you who have been in my house and know me don’t even say anything lol. So now I own this new roaster and it is being put to good use today with my turkey. It feels great that my oven is free for all the other things I will put in it today. I think the bird will turn out delicious and I will have a new way of doing my bird from now on. We will see how it turns out and I will post about it then.

Cranberry Sauce

Cranberry Sauce

I love fresh cranberry sauce. I do not know why anyone would buy it when it is so easy to make.

1 cup water or orange juice
1 cup sugar
1 12 ounce package fresh cranberries
1 teaspoon cinnamon (optional)
1 tsp grated orange rind (optional)


You want to use a fresh bag of fresh cranberries


Aren’t they pretty? Add them to a medium saucepan


Add 1 cup of water or juice. Adding juice will give it more calories and make it sweeter. You can use orange, pineapple or any juice you normally drink. I am using water hee so I can clearly taste the cinnamon


Add 1 cup of sugar


Add 1 teaspoon cinnamon (optional) and bring it to a boil. Reduce heat and cook or 10 minutes or until the berries have broken open stirring on occasion. I really like the flavor that it gives so I use it most of the time.


Pour into a bowl and refrigerate until serving

Pumpkin Pie

Pumpkin Pie

This pie recipe is easy and terrific! It would be even better to use my pumpkin puree recipe instead of canned.

1 (9 inch) unbaked deep dish pie crust
3/4 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon allspice
1/4 teaspoon ground cloves
1 teaspoon vanilla
1 Tablespoon flour
2 eggs
1 3/4 cup pumpkin puree
1 12 fluid ounce can Evaporated Milk

1. Preheat oven to 425 degrees F.


Into a mixing bowl measure out sugar and salt


Add cinnamon


Add ginger


Add allspice


Add cloves and stir the mixture together


Beat eggs lightly in bowl


Add to the mixture and stir to combine


Add the pumpkin. You can use my pumpkin puree recipe here or add canned pumkpin


Gradually add the evaporated milk. The mixture will be soupy


Pour into pie shell. You can find a very easy yet flakey pie crust recipe here


Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

Pumpkin Puree

Yes you can make your own filling from scratch!

Sugar Pumpkin


Select one sugar pumpkin per pie (these are small pumpkins). Preheat oven to 325 degrees F (165 degrees C)


Remove stem and cut the pumpkin in half from the stem to base


Remove seeds and pulp


Save the seeds to roast. Here is the link to how to roast seeds


Place cut side down on a cookie sheet


Bake in the preheated oven 1 – 1 1/2 hours or until tender. This is what they will look like


Scrape pumpkin meat from shell halves


Did you know you can make pumpkin soup and serve it in the shells?


Puree in a food processor and use right away or store in the freezer

In case you wanted to know my 2 little pumpkins gave me 4 1/2 cups of puree

Pie Crust

Pie Crust

This is the easiest and just the best way to make pie crust!

1 1/2 cups all-purpose flour
4 tablespoons butter
5 tablespoons shortening
1/2 teaspoon salt
3 tablespoons ice water


Measure the flour into the processor with the regular blade attached


Cut the butter into cubes and add to the bowl


Add the shortening


Add salt and pulse three times with three counts per pulse to lightly mix the ingredients


Turn it to on and pour ice water into the bowl until starts to get noticeably crumbly


This is what it will look like


Stop the machine, dump the crumbly dough into a bowl


Gather the dough into a ball with your hand until it sticks together


Wrap your dough ball in plastic wrap and place in the refrigerator for 1 hour


To use the dough unwrap it but leave it on the plastic wrap


Roll out to fit your pan


Transfer to your pan


Shape the edge

You are now ready to bake blind or fill it up with something wonderful

Vietnamese Coffee

Vietnamese Coffee

Preparing delicious Vietnamese coffee is quick and easy! It is stronger than American coffee, weaker than espresso and just perfect. You do need a special gadget called a phin filter which is made of stainless steel and has four parts (filter, plate, screw-on or push damper and lid). You can find it online or in any asian grocery store.

Ca Phe Sua Nong – Hot Coffee
Ca Phe Sua Da – Iced Coffee

2-3 teaspoons Coarse Ground Coffee (use a strong roast suitable for espresso)
3 heaping teaspoons Sweetened Condensed Milk
Hot Water (almost to a boil)
Vietnamese Coffee Filter – Phin Filter
Small bowl to use as a bain marie

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Put water into your kettle and let it come to a boil. Take off the heat while you get everything ready. You want the temp to go to 180-190 for best flavor

 

Put a glass into a small bowl

 

This is the best brand of sweetened condensed milk to use for this coffee

 

Spoon the sweetened condensed milk into a glass

 

This is what it looks like if you are just pouring it instead of measuring it out with a spoon

 

Put the plate on the glass

 

This is the recommended band of coffee

 

Spoon the coffee in the filter

 

Tap it to make the grounds level

 

Next grab the damper. This one is a screw on type

 

Screw the screen back on until it stops which will compact the grounds

 

Unscrew 2 rotations

 

Place filter on the glass with the milk and pour boiling water into the bowl to heat the milk and glass

 

Pour just enough hot water to cover the grounds

 

This is about how much water to add and then you are going to let it sit for about 20 seconds

 

This is what it looks like after 20 seconds. The grounds have absorbed the water and are now ready to brew a perfect cup of coffee

 

Pour hot water to the top of the filter

 

Put the cover on to hold in the heat and let sit until water has gone all the way through filter

 

The brewing process should take about 4 minutes

 

Remove the lid

 

Take the filter and put onto the lid to catch any drips

 

Serve it just like this… isn’t it pretty

 

To drink just stir the condensed milk into the coffee and enjoy Ca Phe Sua Nong – Hot Coffee!

 

To have iced coffee grab a glass of ice

 

Pour the hot coffee over the ice
